Astaxanthin is a ketone or carotenoid pigment with a pink color, lipid-soluble, and insoluble in water, but it is soluble in organic solvents. It is widely found in the biological world, especially in aquatic animals such as shrimp, crabs, fish, and in the feathers of birds, where it serves as a colorant. Astaxanthin is a carotenoid that is not a source of vitamin A, meaning it cannot be converted into vitamin A in the animal body.
Astaxanthin is both a fat-soluble and water-soluble pigment that occurs naturally in marine organisms such as shrimp, crabs, salmon, and algae. The human body cannot synthesize astaxanthin on its own. It is considered the most potent antioxidant in nature. Its antioxidant activity is 550 times that of Vitamin E and 10 times that of beta-carotene, which is why it is often referred to as the "King of Antioxidants."
